Ingredients
4 fillets of Dover sole or lemon sole fillets
salt and freshly ground pepper to taste
1/3 cup flour
1 tbsp unsalted butter
1 tbsp vegetable oil
1/2 cup milk
4 tbsp fresh parsley, chopped
1 lemon
Method
1. put the milk into a dish , in another dish put the flour and season with salt and pepper
2. dip a fish fillet into the milk, then into the flour, turning to coat both sides, shake off excess flour
3. heat the oil in frying pan over medium high heat and add the butter. When the butter stops foaming, add the fillets, fry the fish gently for 4 minutes turning once. Sprinkle with chopped parsley and season lightly with salt and pepper. Spoon the sauce over the fillets and server immediatel with wedges of lemon
