These make an attractive present when packed into large glass storage jar, and are delicious with meats and poultry.
Ingredients
4 firm pears, peeled
12 cloves
550 g demera light brown sugar
1.1 / 2 pints white wine vinegar
pared rind of a lemon
small piece of root ginger
2 cinnamon sticks
2 tsp whole mace
Method
1) stud each pear with 3 cloves
2) dissolve the sugar and vinegar
3) put the pears in a saucepan, pour the vinegar mixture over the pears, add rind and spices and bring to the boil, simmer until the pears look transparent
4) remove the pears from the cooking juice and drain
5) put the pears into a sterilised hot jar
6) simmer the vinegar mixture until thick and syrupy, pour over pears and seal lids.
