Ingredients
spice paste, add to taste
1-1/2 pounds sweet potatoes, peeled and cubed
2 cups vegetable broth or water
1 can plum tomatoes, undrained, chopped
1 can chickpeas (garbanzo beans), drained and rinsed
1-1/2 cups sliced fresh okra or 1 package (10 ounces) frozen cut okra, thawed
couscous
hot pepper sauce
fresh coriander for garnish
Spice Paste
Ingredients
6 cloves garlic, peeled
1 tsp coarse salt
2 tsp sweet paprika
1-1/2 tsp cumin seeds
1 tsp cracked black pepper
1/2 tsp ground ginger
1/2 tsp ground allspice
1 tbsp olive oil
1) prepare the spice paste. Process garlic and salt in blender, until the garlic is finely chopped, add remaining seasonings. Process 15 seconds. While blender is running, pour oil through cover ,process until the mixture forms a paste.
Method
2) Combine sweet potatoes, broth, tomatoes with juice, chickpeas, okra and the spice paste in a saucepan, bring to a boil over high heat, reduce heat to low. Cover and simmer 15 minutes. Uncover; simmer 10 minutes or until vegetables are tender.
To serve; garnish with coriander and serve with couscous.
