Ingredients
4 cups fresh corn, cut from the cob
1 cup chicken stock Stock Recipes
1/4 cup butter
1/2 cup chopped green onions
31/2 cups milk
1/2 tsp salt
3 tbsp chopped green chilies
1/4 tsp chopped red chillies
6 tbsp sour cream
1 small bunch coriander chopped
Method
1) combine corn and chicken stock in a food processor and blend to purée
2) melt the butter in saucepan , fry the onions with the chilies until soft, add corn purée, simmer for 5 minutes, add milk and salt , cook for 15 minutes over low heat.
Serve with a garnish of sour cream and coriander.
