Spicy Redcurrant Sauce
Ingredients
1 lemon 1 orange 2 sugar lumps 2/3 cup port 4 allspice berries 4 cloves 1 tsp mustard seeds 1 cup redcurrant jelly 2 tsp arrowroot 2 tbsp orange liqueur pinch of ground ginger
Preparation:
1) Carefully pare the rind from the lemon, using a knife, scrape off any pith, then cut the rind into matchstick strips, place the strips in a saucepan , add the water to cover and bring to the boil, cook for 5 minutes, then drain and set them aside.
2) Wash and dry the orange , then rub it all over with the sugar lumps until they are saturated with the orange oil, put them in the clean pan with the port and whole spices, bring to the boil, then remove from the heat and cool.
3) Strain the spices port into a separate saucepan, then add the redcurrant jelly and stir over a low heat until the jelly has dissolved, mix the arrowroot with the orange liqueur in a small jug, stir the mixture into the sauce and bring to the boil, cook for 1-2 minutes, stirring , until the sauce is thick and smooth
4) As soon as the sauce has thickened, remove the pan from the heat and stir in the blanched lemon rinds and the ground ginger.
Serve at room temperature, with hot or cold duck, gammon slices or grilled lamb cutlets.
