Ingredients
1 small onion, sliced
2 cloves garlic, crushed
2 tbsp olive oil
28 oz whole peeled tomatoes
4 tsp honey
1 tsp grated lemon peel
¾ tsp ground cumin
1 ½ tsp lemon juice
salt, black pepper and cayenne , to taste
6 salmon fillets
2 tbsp chopped toasted almonds
2 tbsp chopped fresh coriander
3 cups cooked couscous or rice
Method
1) sauté the onions in the oil, until golden, stir in the tomatoes with the liquid, honey, lemon peel and cumin, simmer 10 to 15 minutes.
2) stir in lemon juice and season with salt, pepper and cayenne to taste.
3) season the salmon fillets with salt and pepper, fry both sides in hot olive oil,allowing 10 minutes cooking time per inch of thickness
To serve: top with the sauce, sprinkle with almonds and coriander. Serve with the couscous to garnish.
