Ingredients
1 small lettuce, the crunchy type is best like a Cos, chopped
1 Kg of fresh squid skinned, cleaned and cut into even strips
2 tbsp sunflower oil
3 shallots or 1/2 onion, try to get the red ones for flavour and it looks good.
1 cup mint leaves chopped
1 cup coriander chopped
1 1/2 cup basil leaves, these should be torn not cut with a knife
2 long red chillies, seeded and sliced very thinly.
For the dressing
2 cloves of garlic
2 coriander roots, scrapped and washed. If you cannot find the roots, finely chop a sprig of coriander.
1 small red chilli, seeded and chop coarsely
1tsp sea salt
1/4 cup soft brown sugar
1/4 cup lime juice
1/4 cup fish sauce
Method
1) process the the coriander root or finely chopped sprig, chilli, garlic and salt into a paste then stir the fish sauce, lime juice and sugar and stir until all ingredients are well mixed.
2) arrange the lettuce on the four serving plates.
3) Toss squid in the vegetable oil and drain excess oil before placing on a hot frying pan and cooking for 2 minutes, turning once. It is important not to overcook as the squid will become rubbery.

4) put the squid in a bowl and add the chilli, coriander,mint, onion and basil, then cover with the sauce and toss until the are well covered.
6) heap on to the lettuce leaves and serve.
