Ingredients
300g long beans or french beans, trimmed and cut into size bite
1 large zucchini, trimmed and cut into size bite
2 tbsp oil
1 tsp black mustard seeds
1 tsp ground turmeric
1 garlic clove, finely chopped
salt to taste
sprig of fresh curry or 10 dried curry leaves
Method
1) heat oil in wok and fry the mustard seeds until they pop, reduce heat and stir in turmeric, garlic, salt and curry leaves, add beans and stir-fry for 1 minute over medium heat
2) add 1/2 cup water, cover and simmer for 5 minutes, add zucchini and stir-fry until almost all liquid has evaporated.
