Sweet Vegetable Pickles

Ingredients

2 med. cauliflowers cut into small flowerets
2 med. peppers, cut into 1/4 inch strips
2 med. sweet red peppers, cut into 1/4 inch strips
9 med. onions, peeled and quartered
2-1/2 cup white vinegar
1-1/2 cup water
3 tbsp. salt
3 tbsp sugar
1 tbsp. mustard seeds
1 tbsp. celery seeds
1/4 tsp. turmeric

Method

1) boil cauliflowers for 5 minutes for 5 minutes, drain

2) heat to a boil, vinegar, sugar, salt, mustard seeds, celery seeds, turmeric,11/2 cup water, add vegetables and boil for 2 minutes, uncovered.
