Tabbouleh

Ingredients

85 g bulgur wheat
400 g sweetest tomatoes, seeded and cut into small cubes
4 spring onions
3 small bunches fresh flat - leaf parsley, roughly chopped
1 small bunch fresh mint, roughly chopped
1 small bunch fresh coriander, roughly chopped (optional)

Dressing

1 garlic clove , crushed to paste with a little salt
1/4 tsp ground cinnamon
1/4 tsp ground allspice
2 tbsp lemon juice
3 tbsp olive oil
salt and pepper to taste

Method

1) with fine bulgur,wash it well in a sieve and shake the water , with medium bulgur leave, it to sit in cold water for 3 minutes and shake the water to dry

2) mix all the salad ingredients together starting with garlic,salt and spices,lemon juice and then stir in the oil
