Tagine with Honey and Apricots

Ingredients

6 lbs of chicken pieces
2 large yellow onions chopped
2 tsp butter
1/2 tsp turmeric
1 tsp black pepper
2 cinnamon sticks
1 lb dried apricots
8 tbsp honey
2 tsp ground cinnamon
1/2 cup peeled almonds
1 tbsp sesame seeds
1 tbsp oil

Method

1) in a large pan, melt the butter and fry the onions, add the chicken, salt, pepper, turmeric and cinnamon sticks, and stir, add enough stock to cover the chicken, bring to the boil, reduce the heat to simmer and cook the chicken until tender
2) remove the chicken from the pan, add to the pan the apricots and simmer for about fifteen minutes, then, stir in the ground cinnamon and the honey, stir and simmer until the sauce as a syrupy consistency, add honey to taste, salt and pepper to taste

3) sauté the almonds in the hot oil, remove the oil from the pan and toast the sesame.

To serve: Return the chicken to the sauce and re-heat , top with sesame and almonds.
