Taramasalata Recipe
Ingredients
115g 4oz smoked mullet roe or smoked cod's roe 2 garlic cloves, crushed 1/2 tbsp grated onion 3 tbsp olive oil 4 slices white bread, crust removed juice of 2 lemons 2 tbsp milk or water freshly ground black pepper pitta bread to serve
Method
1) place the smoked roe, garlic, onion, oil, bread and lemon juice in a blander or food processor and process until smooth
2) add the milk or water and process again for few seconds, this will give the taramasalata a creamier texture
Chill 1-2 hours before serving, sprinkle the dip with freshly ground pepper and serve with pitta bread
