Tenderly Loving Chestnut Cakes

These great cakes are perfect for Christmas, and are a tea time favourite

Ingredients

5 oz chestnuts paste, purée
6 tbsp softened butter
3 eggs and 3 egg yolks
2 tbsp sugar
11/2 tbsp flour
11/2 tbsp chestnut flour
1/2 tsp baking powder

Method

Preheat the oven to 350° F180°C Gas 4

1) in a large bowl mix together the chestnut purée with the softened butter and the whole eggs

2) in another bowl beat the egg yolks, add the sugar, beat until pale

3) stir the flour and baking powder into the chestnut purée mixture

4) mix both mixture together

5) butter 4 ramekins( 2 inches high 5-6 cm) and chill for 2 minutes

6) ten minutes before serving, pour the dough into the ramekins, filling half way, bake for exactly 10 minutes, allow to rest 2 minutes before serving.
