Ingredients
1 tbsp sesame oil
375 raw tiger prawns, in their shells
2.5 cm ginger root, peeled and finely chopped
2 garlic cloves, crushed
3 tsp coriander seeds, crushed
1 red pepper, cored, seeded and thinly sliced
6 tbsp coconut milk
2 tsp hot chilli sauce
grated rind and juice of 1 lime
2 tsp sugar
1 Chinese lettuce, shredded
1 tbsp basil leaves, chopped
Method
1) fry the prawns, garlic and ginger in the hot oil, for 1 minute each side, add the lime juice and rind, coriander, pepper, coconut milk, chilli sauce and sugar. cook for 2 minutes
2) remove the prawns and keep warm
3) continue to cook the pepper strips for another 2 minutes, until the liquid has almost evaporated
Serve on a bed of shredded Chinese lettuce.
