Tomato and Onion Bake

This nourishing and flavoursome bake is just the right thing for a winter's day

Ingredients

55 g/ 2oz butter, plus extra for greasing
2 large onions, thinly sliced
500 g 1 lb tomatoes, skinned and sliced
120 g breadcrumbs
salt and pepper to taste
4 eggs

Method

1) grease an ovenproof dish with butter

2) in a frying pan, melt the butter, and fry the onions over the low heat for 5 minutes

2) layer the onions, tomatoes and breadcrumbs in the dish, seasoning each layer with salt and pepper to taste, dot the remaining butter on top and bake in a preheated oven,for 40 minutes

3) take the dish out, make a hollows in the mixture with the back of a spoon, crack on egg in each hollow, return to the oven and bake for 15 more minutes, serve immediately.
