Cultivated oyster mushrooms can be substituted.
Ingredients
450-500g mushrooms, cleaned and left whole
110 ml olive oil
100 g plain flour
1 tsp salt, freshly grounded black pepper
a pinch of cayenne pepper
1/2 cup chopped parsley
Method
1) heat the olive oil
2) mix the flour with the salt, black pepper and the cayenne pepper
3) roll the mushrooms in the seasoned flour
4) dip them in the hot olive oil, turn them after a minute, and cook them for another minute
5)sprinkle with parsley and serve immediately.
